Deleting Successive Artboards
If you have a list of artboards and try and delete several of them in a row, deleting one will deselect the list. This is not a major issue in most cases, but it is a nuisance when having to quickly delete 40 or more artboards; it doubles the number of commands that need to be inputted before reaching the same result.
We have the fix available in the latest release. Please update Illustrator using Adobe Creative Cloud application to the latest build for version Illustrator CC 23.0.
Please refer to our knowledge base FAQ – https://illustrator.uservoice.com/knowledgebase/articles/1844590 if you face difficulty in update.

For anyone with the same issue, here is the response I got from the Adobe Illustrator team. I found this to be much more efficient than how I used to delete multiple artboards.
To achieve this quickly what you can do is select multiple artboards by shift + click or shift + drag to marquee in artboard tool mode and hit delete. All selected artboards will be deleted.
