Also having this issue on the latest release of Photoshop CC & Illustrator CC on an up-to-date macOS Catalina.
This issue is also present in the 'Save For Web' dialogue box.

Latest Illustrator release 24.1, you still cannot CMD + A / X / C when clicking the new folder button in the "save as" window. Catalina 10.15.3,

It is not fixed yet. I can't even make a new folder from the Save As command. This is getting out of control. Cmd + Shift + N once in the "Save as" menu does not work in the latest version of illustrator 24.0.3.

Same here. Unable to use shortcut Cmd + Shift + N to create a new folder. Dramatically cripples my production speed as I would shortcut-create a new folder, name it and hit "SAVE." Now, if I don't watch myself and my conditioned reflexes, I will rename the file i'm saving something like "PRINT.pdf" and save it in the work in progress or client files folder. Big mess.

Same issue in Photoshop but I don't see an update available for that.

this is fixed in illustrator, however I can still not copy something outside of illustrator and paste it into the save as document

Works better but still doesn't work properly in 24.0.1.

You can copy text from Illustrator, paste it in Notepad, and then re-copy and paste it back to the Save-As window, but that is still a workaround.

You still are unable to copy/paste text from within the app.

I'm experiencing the same issue. It's driving me nuts as it really messes up my workflow. Any idea how to fix this??

Macbook Pro 2016 (15 inch) running Catalina 15.1, 2.9 gHz Quad-core i7, 16GB RAM, Radeon Pro 460 GPU

As of Illustrator 2020 release, you are no longer able to copy/paste plain text into the Save As file name or create folder name. I have tried this every different way, reset preferences, restarted computer. Can't find a solution for it.

It worked just fine in AI 2019 with no issues.

Tried the 24.0.1 Update, NEW FOLDER window in save as still doesnt let me use keyboard shortcuts

Still experiencing the same issue. Bug not fixed. I'm working on a Mac, Catalina v10.15.1. Uninstalled old Illustrator 2020 (v23.1.1) and installed this version Illustrator 2020 (v24.0). No change.

Hi, Keyboard shortcuts now work for Save As document titles. Thank you very much.
However, it still doesn't work with New Folder title names. Please correct this as well.

Honestly, I downgraded to CC 18 because I couldn't stand this anymore. CC 18 programs work great and run super smooth. It was getting to the point where the newest versions were disrupting my workflow and reducing my productivity. I will not be upgrading to your newer programs anymore, until I hear from other users. You should really make sure they at least function correctly before releasing them to the public.

Same issue here. Only happening with Illustrator 2020, not Indesign or photoshop.

I used to be able to paste text into the file name when I save a file but in this latest version, I don't seem to be able to it that anymore.

Same exact problem over here. Huge problem for me. I save a lot of files with copy and paste functionality.
