Using Adobe Illustrator 23.0.1 CC 2019. My CMYK color 100-85-0-0 changes to 99.17-83.58-1.74-0.02. My document color mode is set to CMYK. How do I keep original l color mix?

Illustrator CC 2019 spots not changing to CMYK
Mojave 10.14 I just updated to Illustrator CC 2019 and when I try and convert a spot colour to process it wouldn't enable when I click OK -

Gradient stroke with spot colors separations error
Using spot colors in a gradient stroke has problems on a close path. When viewing separations, white gaps appear between some spot colors.

gradient locks to a color stop in the color tab. If I want to use a solid fill on the color tab it only allows me to change the color stop.

I have to remove the gradient first then choose a color. Older versions allowed me to just click on the color fill box and I can toggle between gradient stop and object fill.

Automatically Overprint ON in Gradient
We have disabled Overprint in Gradient stroke for the particular eps. But once we save the eps file and again open the same eps in illustrator, automatically overprint enabled.
Due to this we have received quality issue in Printer. So please let me know how to disable overprint for Gradient Stroke.

Adobe Color Themes pop up is unnecessary and obstructive.
When using the Adobe Color Themes panel, there's a pop up that says "Click to set active color" when you hover over color swatches. You can't click on the color beneath the pop up without first moving the mouse off of the pop up. It makes using the color themes panel slow and obnoxious. Please either move the location of the pop up off of the swatches one is trying to access, or remove it altogether (or give us an option to disable it)
Turning off "Show Tool Tips" in preferences doesn't fix the issue.

Color blend control panel
Trying to change a fill in a preexisting color blend. Control panel only allows shifting the current blend, not adding or changing color. Any time the color pallet is selected, the blend control box disappears. Adobe is adding more features is cool, but taking away the basic features we've had for years is uncool.

Hue
Setting a hue to 90 degrees while in sRGB will convert the hue to 88 degrees after you click OK. This same behavior does not occur in Photoshop.

Allow a custom swatch palette to be the AI default without using "Legacy File>New"
Unless I've missed something, it is not possible to use a custom swatch palette as the AI default for all new documents without using the "Use Legacy File>New" feature. No matter what I tried, I couldn't get my custom palette to be the default. Using the standard (non-Legacy) new document feature, I always have to navigate down through the menu to choose my custom swatches, and then it only applies to that one new document. About 99% of what I do is spot color artwork for silkscreen printing, so the AI default CMYK swatch palette is useless to me.

CMYK Spectrum on color tab looks broken
On the latest Illustrator update the CMYK Spectrum looks broken on the color tab. At first I thought it was a display problem however comparing other Adobe apps and even in illustrator color picker there is nothing wrong.

Graduated tints apply to unselected objects
Graduated tints apply to unselected objects when I change the colour on the slider. Its really impeding my workflow - in fact its not possible to work with. If I'm working on a large scene, suddenly all of the grads are messed up.

Gradients Swatch Box Snaps Back
When expanding the box to see your gradient fill it immediately snaps back to the letterbox default. I cannot gauge the color gradients very well without enlarging the viewable gradient area.

Libraries now converts all my saved Spot CMYK swatches to RGB.
I can no longer bring in my previously made Spot CMYK swatches as CMYK. All my spot color swatches are converted to RGB. I can create new spot CMYK swatches that come in properly in a newly created library but anything created in the past or in a previously made library is now all RGB.

Adjustments in gradient slider not applying to grouped objects
When adjusting the gradient slider for a group of objects, only some of the objects are affected by the slider. The rest of the objects don't change. Applies to both linear and radial gradients, but problem more frequent for radial.
(In screenshot, the lower-right corner shows how some of the objects follow the gradient slider adjustment, but the rest of the objects in the group don't change. Freeform gradients color stops were altered after crash
Running Mac OS High Sierra and Illustrator CC2019.
While editing one shape with a freeform gradient, Illustrator crashed. Document had been saved prior to the edits. When opening the recovered file, all objects using that freeform gradient had all their color stops altered. Instead of dark brown, med brown and yellow, color stops were changed to use Registration, an unnamed brown and an unnamed pale color. None of those colors matched what had been used prior to the crash. Had to manually go back and redo the freeform gradient.

Default Black
My default black (000000) is registering as a dark grey (1A1818). I have updated the software and tried CMD+drag the "black" and white style in Graphic Styles to the default location in an effort to reset. Nothing is working; every time I need black (which is often) I have to go in and manually change the color to 000000.
