High Sierra (macOS 10.13) GPU rendering issues with RGB document - Intel Graphics
Illustrator 21.1.0 has issues with GPU rendering in the latest High Sierra public betas:
Paths will appear jagged and generally do not display correctly.
Altering the zoom level affects these artefacts.
Switching off GPU rendering altogether fixes the issue but this way, performance is obviously affected.
Additional Note: Works correctly in CMYK document.
the issue has been resolved by Appple in macOSX 10.13.4

It's NOT the GPU Preview...
The same rendering issues are still present on a 2015 iMac i7 (1 generation old) with plenty of RAM, and 2 GB GPU RAM. Same 'glitches' in objects (simple rotated rectangles, or text that pick up graphic 'bits' from surrounding objects) that appear when the GPU Preview is on.
Whatever you did from CC 18 Beta 21.1.0 to today's release, you broke it. You've admitted you've been trying to do things to the layer structure/panel (to emulate Affinity Designer) to speed up file open/save. I think most of us would take longer file open times to have the rendering work properly.
Back to CC 17...maybe some day decade long bugs/issues will be fixed. Until then, new Properties panel! Yippee.
Is this a harsh comment. Yup. Because every time you guys mess with code and basic functionality, you're messing with our livelihoods. I'll take a Honda with manual transmission that lasts for 20 years, than a Porsche that can't make it out of the driveway because the wheels keep coming off.

Same old Adobe excuse, "It's Apple's fault..."
Been hearin' that one for two decades.
Through OS 9, to OX 10, to 64-bit, to GPU this or that....just write better code.
IT is NOT something about Touchbar, ...and you should have had High Siera Developer Beta for months....
And yet you officially release a product that does. not. work.
Shame on you.

Still no update for High Sierra. It seems the time has come to unsubscribe the Creative Cloud. Adobe promised fast updates – but nothing happens.

As you can see, what it should look like, and what it actually looks like. Turning on GPU Performance gives this sort of an issue, and turning it off affects the speed and productivity a lot. Scrolling and zooming becomes very slow.

We have figured out the root cause and have been able to reproduce it. 2017 model of Touchbar MACBook has the same Intel Iris driver that is causing issues on High Sierra. The fix is in the driver and we are working with Apple to get this resolved.

I'm having the same issue since I upgraded to High Sierra. The rendering is really poor quality.

I recently purchased the new 2017 MacBook Pro (with touch bar). One of the first things I did was download all of the CC apps that I use on a daily basis.
Anytime I work in Illustrator with GPU Performance turned on, Illustrator has a huge lag and takes forever when I do basic tasks (zooming in/out, using any of the tools, etc.). Turning off GPU Performance fixes this issue, but that seems counter productive since this is a brand new computer.
My previous Mac (late 2011) ran Illustrator CC 2017 perfectly fine with GPU Performance turned on.
Not sure what causes this but hopefully there will be a solution soon.

Illustrator is very slow since High Sierra update. I mean...VERY!
When selecting object they move around VERY slow, leaving glitches of the object on my artboard. When selecting an object it takes a second for the handler/segments/paths to appear.

We would need more details to move ahead. We are aware of only a few hardware specific issues that we are tracking with Apple.

Not sure why but whenever I am working on a project I now have this graphic defect or glitching on over my work. (see recording) I even create new documents and it still does it. I had my hardware checked at apple and they said all is good so my only lead is its something to do with the app possibly.
