Yeah, users don’t really understand how does the Blend tool work, especially the Smooth Color option :(

Here is a long discussion about it: https://community.adobe.com/t5/illustrator-discussions/blend-tool-not-making-smooth-color-blend/td-p/5593744
The solution is found at the second page by Doug Roberts:
    > So the cause of this is the Inside stroke attribute in the default graphic style of the 'Web' document preset.

Indeed, even when objects don’t have strokes applied, and the weight of it is zero, the Inside attribute is still active, although completely invisible in the Appearance panel and barely visible in the full Stroke panel.

The chance for users to discover it in a way other than chance are slim... and the help article (helpx.adobe.com/illustrator/using/blending-objects.html) never really explains it. Illustrator just fails to calculate steps, because inside/outside strokes are not 'basic' appearance attributes, they are secret compound paths — again, hardly a public knowledge.

That’s why 'Expand your shapes' workaround works — it remove the Inside stroke attribute, allowing Ai to calculate steps for a smooth transition.

Does it still happen in the latest version of Illustrator? Can you preproduce it?

An excellent second part of the report, thanks for sharing it aloud. Although it does not specifically say anything about certain pain points, it greatly describes the overall impression for a large set of users. The more experienced we get with the app, the more convoluted it seems. This seems to be a natural disillusionment, a realization of a flawed system, dictated by legacy decisions. It easily applies to all of the complex older apps we have today, not only Ai.

However, let’s back to the main report, the first part.
I’d like to see the test file and/or a video of it. Sure, 4 years later it might be too late for this, but it’s tough to investigate anything without an evidence. Joe, do you still have it on you? does a mesh still get stuck in the grayscale mode?
As for the nodes’ positioning — the Mesh tool never respects the anchor points of the original path when rows and columns are generated. It won’t make the grid less regular just to make a node coincide with a point — if I am getting this right. Again, a demo is appreciated.

I am testing it right now and holding Shift does constrain moving a nesh point, with both Mesh Tool and Direct Selection Tool.
Not along the edge of the mesh though, but just along axes, 0/45/90 angles, as expected.

So far to create a mesh like this, looped in a ring, we have to create a circle, fill it with a radial gradient, expand it to gradient mesh.
The result is exactly what we need. The seam we get on the right side is inevitable (that’s how meshes do)... and it can be more or less automated... but still it feels like this can be done faster and from the box.
MeshTormentor plugin does not really have any in its toolset also.

What happens if you try to go Window > Workspace > Reset [workspace name]? What if you choose another workspace there at all?

Zacharian, can you please record a short video to demonstrate the problem?
I don’t understand what you mean with 'double-click to scale manually'. I’d like to try to replicate this.

Elena, which export method do you use to produce these files?

The similar problem was resolved recently: https://illustrator.uservoice.com/forums/601447/suggestions/46741123
It turns out the swatch was in use by the plugin.
Can you check all the symbols, graphics styles, anything like this in the document that might use the swatch?

Well, this is somewhat expected. Glad it got sorted out.
I will share this with the AG team, but I am sure they can't workaround this. The effect should keep the swatch to call it. Meanwhile I am closing it as Resolved.
    Thanks for raising this up!

Marc, I can delete it and it stays deleted when I read the file back. Take a look — does is occur when the attached document gets opened?
And I recall seeing this problem before...
Where does this swatch originally come from? Are Libraries somehow involved? Do you have any symbols, styles, anything like this in the document that might use this color?

Yeah, this is slow. Quite boring to watch the video and painful to actually work like that :(
Jennifer, can you share the file with the team so they can investigate it?
Send the link over to sharewitihai@adobe.com, and also attach the link to this report for tracking purposes (https://illustrator.uservoice.com/forums/931885/suggestions/46738483).
Also provide the specs of the iPad you are using.

This seems like a natural extension of Global Edit. But it’s an incredibly hard task as I see it.
For now just avoid not grouping what is going to be a group :)
But I like the idea, I was thinking along these ways for some time too.

Ari, do you refer to the Type > Font menu, or the Font Family dropdown in the Character panel?
If the latter — does it work fine when you not scroll, but use a scrollbar in this dropdown instead? clicking arrows or dragging it? navigate with physical keyboard keys?

    Related to another request:
Make size of artboard number/name label change with the UI size slider

I think this is more a bug than a feature request and should be moved in a different branch.
