Live preview of color is now live in Illustrator 27.1.1, for Color Picker dialog, Color panel, Properties and Control panel, and Appearance panel.
It works in GPU mode only.

Illustrator allows option to Simulate Color Paper, whereby user can pick any color as the background. (This is accessible from File -> Document Setup)
Does this help solve the described concerns?

The way Illustrator handles this has never benefitted me. What should be a simple, one-step function always becomes two.
Change this behavior.

Asset export dialog does not have this option to export each file as a separate file it only has option on all artboards in one file, range of artboards or selected artboards in the dialog or the whole of document into one pdf file.

When I "Export for Screens" to PDF, intending for each artboard to be its own file, the exported PDFs still include all other artboard data.
It's completely insane.
To fix it, I have to manually remove the extra artboards from each individual PDF using Preview or Acrobat, or Illustrator. So tedious.
Is anyone at Adobe ever held accountable for shipping such awful software?

There is no true PDF Export in Illustrator, because Illustrator allows to have editable PDFs with .ai-content stored within. Other apps does not allow that, and some users heavily rely on editable PDFs.
Attemps to solve this were made, but there is no clear solution so far. Still we hope to find one.
The intended way to get a PDF (without loosing your data) at the moment would be to use Save a Copy command that saves a separate copy of your file to PDF instead of Save As which keeps a saved file open.

I am happy to share that we have fixed this bug in our latest release – 24.2.0 which is available worldwide now.
Going forward, our goal is to fix as many top User-Voice bugs as possible and as frequently as possible. Given the nature of the fixes, some of the bugs will take a longer time to fix, but we are on it.

I think this view should persist when moving into and out of isolation mode.
