As stated in the article linked below, Pantone’s licensing with Adobe got changed.
Due to this change, customers will need to purchase Pantone Connect licenses to access Pantone colors in Adobe Creative Cloud products.

As per the comment.
The rounded corner box is still there in new versions, but hidden, as a 'not-frequently-used' — well, statistics-wise. Click on the three dots at the bottom of your toolbar and pick Rounded Rectangle tool directly, or drop it into your toolbar.
Please free to add comments, if you think that this tool should be included to the Essentials toolbox anyway, and why you think this is important.

If I am understanding what you are asking for correctly. The rounded corner box "is" still in Illustrator 2019 and 2020 version.
Click on the three dots at the bottom of your toolbar and you will see a whole array of tools that you can drop into your toolbar. You can customize the toolbar too now with the tool you use most.

The most recent version finally has the Object > Distribute menu added.
Now both Align and Distribute commands can be accessed via menu and have assigned keyboards shortcuts to them.
The order of the commands though seemingly matches the one the panel has: horizontal first for Align and vertical first for Distribute. Also, Align To and Distribute Spacing commands are still missing in top menus, so please keep voting here to make them added too.

The Links panel now has a Delete button in the latest Beta (28.1.0.87).
Please check and try if it works for you as expected.
You can access Beta in the Beta section of your CCD app.

The intended way of setting a default font is to edit document profiles. These files are located in folders like 'C:\Program Files\Adobe\Adobe Illustrator 2023\Support Files\Required\New Document Profiles\[language]\' on Windows and 'Macintosh HD > Applications ▸ Adobe Illustrator 2020 > Support Files > New Document Profiles > [language]' on Macs.
Make a copy of the one you want to use someplace else, open it in Illustrator, make your changes, replace the original and then use it when creating a new file.
There are many tutorials on the web about managing these, like this one: https://productivista.com/new-document-profiles-saves-your-default-settings/
However, this way indeed is not the most discoverable. Please continue to vote and leave comments if you want this to be improved.

Here are two ways I find where a stray color is...
1) Draw a box with the same stray fill color. Then select same fill color. It will grab all objects with the same fill color. If you still aren't finding it. It might be a stroke of the color. Draw a box with the same stray stroke color. Then do same thing with select same stroke color.
2) Turn on Overprint Preview in your Separations Preview palette and then hide all the colors except for your stray color and it will show you where the color is located.
