I'm in the same boat with book cover design where I need bleed on the front and back cover but not on the spine. For purposes of later export, and flexibility, I like to create the front, spine, and back portions of a book cover on separate artboards. But the bleed guidelines for the separate artboards get confusing when they start to overlap when I moved the artboards next to each other.
