General slowness on using Illustrator on Mac is one of the major issues reported in this thread. Illustrator team made significant progress in replacing Illustrator’s GPU rendering engine from OpenGL to macOS Native Metal Rendering Engine –
We have observed common operations like Zoom, Pan, and rendering operations are now smoother in cases where it was sluggish as reported in this thread. We urge Mac users to try the Illustrator Beta build with Metal support and share your feedback.
Please note, this may not address other performance issues reported in this thread not related to rendering like File Save, Export, or slowness in any particular feature.

This build is available in Illustrator Prerelease Download Section –

I echo the Admin's comment; take just a few minutes to schedule an online session with the Adobe Illustrator team. This worked for me. The problem is gone and everything is working perfectly!!!!!

I believe the problem has been solved for me... I called in for one-on-one help with Adobe. It took over an hour, but someone worked remotely on my computer to solve the problem. As i understand it, preferences were adjusted and I was told to use only the latest version of AI. I also turned off auto save in preferences as someone else had called this out as a solution.
    All is working smoothly now!!!
