  2. Expanding a blend breaks the middle steps

When blending from one object to another, everything works great unless I want to expand the shapes, and then things get a little bizarre. i use this tool quite a bit and when expanding my blends, since CC 2019, I've never had a problem until now.

Not sure how to fix this other than rebuild the shapes... but this time it's a simple shape. Other times, it was not. Very inconvenient. Bewildered.

What happens is that Ai expands the objects first and then blends the expanded shapes.

So to make it work properly you should expand the blend only first (with a dedicated Object > Blend > Expand command), rather than the general Object > Expand, and then use the general Expand and Expand Appearance.
