This device can’t run desktop Ai :(

Just out of curiosity, why is it so hard to support this product on an ARM-64 device?

Surface Pro X include ARM CPU, not Intel CPU.
Surface Pro X can only emulate x86 applications.
Illustrator 2020 (and higher I believe) cannot be used because it becomes a 64-bit application.But!
There is a workaround, which basically requires running Ai on a different machine:
