    Hey Jamie, I managed to solve it.

    Go to edit - color settings and change from "emulate adobe illustrator 6.0" to "custom" ... then select the color for your workspaces!

    Is there maybe a quick fix for this??

    (even though when you save the files, they end up looking correct, I would still like to be able to visualise them before haha)
