I reached out to Adobe Support and found out that my GPU Performance checkbox was unchecked. I had to go to Preferences > Performance then under GPU performance, I needed to check the GPU Performance box, which immediately resolved my issue. Not sure how that box became unchecked, but that is was fixed this issue for me.
An error occurred while saving the comment Josh Brown commentedWhenever I am zooming in (2400% +), my artwork disappears and the who canvas turns gray. If I mouse over my artwork, i'll see a very pixelated outline of my artwork. I've attached a screenshot of my issue. I've tried restarting my MBP, uninstalling and reinstalling AI. I've tried closing out AI and reopening– but nothing I am doing is fixing this issue. Please help, I need to continue working on client projects.

Hi Sandra. Yes, it has an Intel Graphics 630 1536MB. To clarify, the issue that I had was that my GPU Performance checkbox was unchecked. So that is what was causing my pixelated issues. Once I checked that checkbox, it resolved my issue.
