windows10, Illustrator 26.5 日本語版でも再現します。
合成フォントの設定が変更/反映されない状態です。
ごく一部（漢字フォント）のみが変更できますが、それ以外は変更できません。
選択しても反映されない状態です。
InDesgin については問題ありませんが、InDesign -> Illustrator への Composite font ファイルの書き出しがメニューに存在しないため移行できず、代替手段が存在しません。
50,000 余りの顧客へのリリースに必要な機能のため、早急に修正をお願いします。
