This has been happening to me for the last few versions of Illustrator. I have a decent spec machine (3080ti / 64GB Ram / 5950x) and when it stops working (after maybe a minute or so) the machine is at 3% CPU and 3% GPU. The document is all vector (no embedded images) and not hugely complex. It does though have multiple artboards (the current doc has 19) so I wonder if this has something to do with it.
Another thing to mention is that this happens per document so while the 19 artboard doc stops working, another single artboard document that is open at the same time keeps working.
