GPU Preview not available (grayed out) after editing artboard
With newest version of illustrator the GPU acceleration and GPU-Preview fails in some files. To test it i have created a blank document and the GPU preview works. But when I edit the artboard, the GPU preview is turned off at that moment and cannot be reactivated. Reset the Illustrator-Settings to default doesn't fix it.
Illustrator 25.2, MacPro2013, GPU AMD FirePro D700, Monitor 2560x1600Pixel, Wacom-Tablet, MacOs Catalina and Mojave testet.

This has been happening to me for the last few versions of Illustrator. I have a decent spec machine (3080ti / 64GB Ram / 5950x) and when it stops working (after maybe a minute or so) the machine is at 3% CPU and 3% GPU. The document is all vector (no embedded images) and not hugely complex. It does though have multiple artboards (the current doc has 19) so I wonder if this has something to do with it.
Another thing to mention is that this happens per document so while the 19 artboard doc stops working, another single artboard document that is open at the same time keeps working. -

I'm experiencing the same problem. All my files are now switching to CPU preview and GPU is greyed out. When I start a new document it switches off when I edit the artboard.
Illustrator 25.4.4 & 26.0.3 Macbook Pro (14 inch 2021) Apple M1 Pro 16gb RAM

I tried to post a comment yesterday but it is not showing up, so posting my finding again.
I've found the issue (or at least one of the issues) to be with color profile setting mismatching with placed images. When I created a new clean file, scrubby zoom worked. As soon as I placed an image with a color profile conflict, it stopped working. If you check "Discard the embedded profile..." it will work perfectly. I hope that helps, and I hope it posts this time.

I just had this issue happen and found *a* cause, although probably not the only one.
When I created a blank document the scrubby zoom worked, but as soon as I brought in some placed images I was working with (that had a different color profile), it stopped. What I found is that Illustrator did not like that the placed image color profile conflicted with my doc profile. When I told it to match to the doc color profile, "Discard the embedded profile (don't color manage)", scrubby zoom worked!
