This has been fixed in the latest version - 30.3.
This fix would not correct the existing damaged files but should not happen on new files saved from newest version. Existing files can be corrected by resaving them in latest version.
Please check at your end and let us know.

In Adobe Illustrator version 30.2, certain AI files contain embedded images that fail to display when the artwork is opened in various applications (e.g., ArtPro+, AE Pilot Viewer,...).
The same images are visible in the exported PDF, indicating that Illustrator’s internal embedded PDF stream within the AI file is incomplete or corrupted.
The issue has been validated by multiple independent sources, and behaviour is reproducible outside Esko systems as well. Esko confirmed that the missing images also do not appear in Adobe Acrobat, which further verifies that Illustrator is generating an incomplete embedded PDF layer.
