    I figured out why this is happening. If I save the document (Save As) and select :

    Version: Illustrator CC (Legacy) - This is what loses the bleed settings

    Version: Illustrator 2020 - This works as it is supposed to and saves the bleed settings with the document.

    This is a bug however, because what if I want to save the document in a legacy version so others without the latest version installed can open my files? It should save the bleed settings, even if it is the legacy CC version.
