This issue (entire M1 McBook system freezes) is fixed for AI 25.0.1 and 25.1
This fix takes effect in a day’s time, if you still face this entire system freeze then please follow the steps to update
1). Backup your preferences and launch Illustrator with fresh preferences
2). Quit and re-launch Illustrator once again
3). Use Illustrator in your workflowIf you see AI crash and entire system is not freezing then please create a new issue.

Does Adobe even hear us?? Like do they even read these?
An error occurred while saving the comment Alex Y-D commentedI recently just got my new Apple MacBook Pro 13in laptop, with the Apple silicon M1 chip. My other adobe apps seem to be fine but Illustrator keeps freezing, lagging, rendering artwork improperly and sometime just all together crashing. The most recent crash happened when I when to move a picture I pasted into my document. The whole application froze, and the application crashed shortly after. After Illustrator freezes or crashes, many other applications open on my Mac stop responding too, but it always start with illustrator.

UPDATE:
So I just uninstalled all my apps and reinstalled them and they seem to work fine now. Will keep this thread posted on how they keep going.
UPDATE 2:
It didn’t fix anything permanently. Illustrator is still basically unusable.
