開発チームによると、macOS版Illustratorのフォント処理方法を変更し、一貫性を向上させ、サポートされていないシステムリソースへの依存度を低減したとのことです。その結果、Appleのガイドラインに従い、Illustrator 30.3以降ではシステムフォントが使用できなくなります。
The fix has been pushed into the latest 30.3 general release. Please update, check, and comment back if it still happens.
According to the team, they changed font handling in Illustrator on macOS for better consistency and reduced reliance on unsupported system resources. As a result, system fonts won’t be accessible in Illustrator 30.3 and later, according to the Apple’s guidelines.

AIの各バージョンのファイルと、それらのプレビューのスクリーンショットです。
AIは「123」と数字を打って書体をCentury Gothicに変更して保存したものです。
上記、再現方法のように作成したもののファイル名をバージョン番号に変更しました。

ありがとうございます。
確かに「バックグランドで○○」のチェックをOFFにしたら、化けなくはなりました。
ただ、2024だと化けないというナゾは残ります。
