Having this issue too on my
-MacBook Pro 2017 w/o Touch ID
-Intel i7 2.5 GHz
-Intel Iris Plus Graphics 640
-16 GB RAM
-526 gb SSD storage
Updated to high sierra 10.13.2 and Illustrator 22 also and still the same problems so it must be an adobe issue. Called Apple and Adobe and they seem to have no solutions for this problem. Also tried all the solutions that Adobe listed on how to troubleshoot GPU and it doesn’t work.
