We have the fix available in the latest release. Please update Illustrator using Adobe Creative Cloud application to the latest build for version Illustrator CC 23.0.

Same issue here...
I'm encountering a red artboard when I open ALL Illustrator files. I think it may be a GPU issue...as when I turn off GPU Performance under Illustrator prefs, it works fine.
I'm running CC Illustrator 22.1 (latest) on a (bought new) 2017 MacBook Pro 2.8 with16GB RAM, Radeon Pro 555 2GB/Intel HD Graphics 650 1.5GB graphics on High Sierra. Here's a video of me opening a simple business card (1.5MB file)...
