   Illustrator allows option to Simulate Color Paper, whereby user can pick any color as the background. (This is accessible from File -> Document Setup)

   Right now if I choose a dark interface for Illustrator, my two choices of canvas color are dark gray or pure white. Why can't I pick an abritrary shade of gray?
