Dark / Light mode (theme), both automatic and manual, with full support for dialogs and menus
Now that operating systems support a real light/dark mode, it would be really nice to have this option enabled automatically in any Adobe products when I switch from light to dark and vice versa in my system preferences.
It would be even cooler if you added an option to change the interface automatically depending on the time of the day.
Currently even when settings these up manually to dark, many menus and dialogs still show up as light.

It would be nice if illustrator (and photoshop) changes the UI from light to dark with macOS Mojave's light/dark mode automatically

The Mac version of Illustrator has a much darker theme, and switching to the Windows version was a bit jarring, but I prefer the darkness. Could you tweak the darkest theme on Windows to make it look more like the Mac one? Match the background color in dialogs, menus, etc.
