Where has Export > DXF Gone?
Export as DXF has been removed since the latest update.
This option is essential at our workplace.
Is there a reason why it was removed?

Both DXF and DWG export options are there now in the 'Save as type' dropdown list in the Export As dialog, in recent versions of Illustrator.
Please comment if these are missing for you.

Same here - why was both .dxf and .dwg taken out???

I would also like to know this. It has just disappeared today and this is an essential feature for me.
