If you have some ideas on how it should work — it’s time to discuss it.
Remember, text has more parameters than just font family and size. Document Profiles allow to set any of these using text styles, but editing the profiles them is a long journey. Doubling all parameters would be cumbersome.
How should it differ compared to InDesign’s approach? What other default parameters other than font would you need to alter and how should the solution would apply to those? Please help to make properly.

Please make it much, much easier to cause Illustrator to default to a common set of Character and Paragraph styles.
Having to go into a hidden user folder to modify document profiles, like "Print.ai", is an insult.
In the Styles menu, please include a "Save to common styles".
I have thousands of lines of code that automate Adobe Illustrator, and every time the software is updated everything comes crashing down.
Having a shared, common repository of text styles that are available in every document should be simple and easy to manage.
