    お使いのAdobe Illustrator (デスクトップ版) のバージョン：27.5

    こちらはCreative Cloudからファイルをダブルクリックで開いているのではなく、アプリを起動してアプリ内からファイルをダブルクリックしているということで合っていますか？

    Creative Cloud 内に置いてあるファイルを Mac の Finder 上でダブルクリックしても開かないということです。
    Illustrator の「ファイル」メニュー > 「開く...（⌘O）」では開くことができます。

    問題が発生したときに実行していた手順についても、以下にご記載いただけると助かります。4つ以上の場合は番号を追加してください：

    特定の手順で問題が発生するわけではないようです。
