The issue is believed to be fixed in the latest Beta build and is expected to be pushed into the Global Availability build at the end of July.
To ensure this indeed fixes the problem, please install the latest Beta build from CCD app and try to reproduce it, following the steps provided by Ton in a comment within the report.
Please reply back if Beta works for you or not.

Illustrator v27.7File originally created last Friday, 07/21/23
Opening the file creates the problem every time. Once opened and addressed the issue stays dormant until re-opening the file.
Upon opening and clicking all text that is "Text-on-a-path" jumbles up or disappears. Undo does not fix the issue. When text is clicked on I get a pop-up window telling me that the text was created in a "different version" of Illustrator. Illustrator has not been updated since I created the file on Friday.Exact text of the pop-up:
"This text was created in a different version of Illustrator. Editing the text may cause some changes to your text layout. Basic formatting will not be affected. Do you want to continue?"I expect this to not happen, and it happens anyways.
While it is easy to fix, it's a temporary fix that takes time out of my day to do.
