The problem came at the first use. I don't have this problem with the old version 27.8.1 on the old Mac OS (high Sierra). I've just reinstalled the version 27.8.1 on the new computer (without keeping the preferences) and I have the same sticky selection problem...
I'm totally lostedAn error occurred while saving the comment So commentedWhen I click on an object with the selection tool or direct selection tool, the object sticks to the mouse as if I were moving it or drag it.

I found out where the problem was coming from for me. I disabled the "Display Pilot 2" of my new monitor (BenQ PD2725U) and now my selection tool works normally (it even resolves an Indesign issue which slightly moving an object when it was selected). Hope it helps someone else.
