The team plans to push the fix from the Beta build into the main one in first week of January — hooray!
The current workaround in 29.1 is to disable Missing Glyph Protection option in Preferences > Type.

After typing in text using the type tool, changes in its font style are not applied permanently for further text edits. This happens for both font families and weights. Font sizes, distances, and other manual changes are not affected.
For example, if I type in the text 'No Edits' in Arial, then change it into Futura, it will appear be fully applied to the initial text. However, if I add in new letters, for example, making it into 'Please No Edits', the new word 'Please' will still appear in the style Arial instead of Futura.
This error is happening to both my coworker and me. We are both using Illustrator 29.1 version.
