The team reports the Beta, starting with 29.7.0.88, should have a fix for this.
This particular build introduces a lot of WIP snapping-related changes, so if your work depends on this, be mindful of it. However, before this fix gets pushed into general build, having the confirmation it actually works would be great — so please check it, if possible, and comment back.

with all version of illustrator closed
you can right clic on the file and choose open with illustrator 29.8.1
(if illustrator is alredy open the problem does not occur)
save with a new name
when you reopen the new file the fonts are switched permanently
is not a visual problem they are changed randomly using other font used previously in the original file
I attach the test file resaved from my macAn error occurred while saving the comment marco stefano vaccaroli commented

hi all
I have something new about this issue
I have a file made with Illustrator 29.2
if I open the file on my mac with 29.8.1 and save with new name it is all ok
but
if I have Illustrator closed and double clic the file that starts Illustrator and save with a new name
after reopen the new file the fonts are changed
I attach the file so you can try if you have the same result
