Illustrator allows to variate a stroke width with Width Tool, as described here:
https://helpx.adobe.com/ee/illustrator/using/stroke-object.html
What is exactly do you want for it to be able to do that it does not do now? Please elaborate in the comments.

Please allow someone to not just be stuck with the spaghetti noodle, but be able to define the stroke so that you can, say: have stroke start and end pointy, but with variable widths you can define throughout the line via a tool. Like in Affinity.
