The current workaround for completely eliminating 'Recent' section in font list is to set '0' in Preferences > Type: Number of Recent Fonts.
But since it’s stupid, please add votes to make it work properly.

I am glad to remind all who voted for this feature that it is now possible to set a font size as x-height or cap height with Show Font Height Options toggle enabled in Character panel menu.
Some issues still remain, yes, like, wrong size calculation if a font has rounded stems that end below baseline (https://illustrator.uservoice.com/forums/601447-illustrator-desktop-bugs/suggestions/44639661-font-height-options-misbehave-with-rounded-fonts), or inability to focus the dropdown with Tab (https://illustrator.uservoice.com/forums/601447-illustrator-desktop-bugs/suggestions/41836618-font-height-options-tab-order), or calculating font height by measuring glyphs instead of reading the actual value within the font (https://illustrator.uservoice.com/forums/601447-illustrator-desktop-bugs/suggestions/41615035-cap-height-setting-not-using-font-cap-height), but overall this is done, works, and super cool, don’t you think?

The ability to convert outline text into live text will be available through the 'Retype' feature we recently shipped. The released version can identify fonts for now. Soon it will allow you to edit it as well. More details: https://helpx.adobe.com/in/illustrator/using/retype.html

for example if I'm working with text in Times New Roman from my font favorites and I go back to the drop down font menu it starts back at the top of the alphabetically ordered font list. This is not helpful if you are in the process of selecting the right font and you're going down the list trying them out. So in my example I would like to go back to the font menu and still be at the Times New Roman font ready to scroll down to the next font I want to view
