I have spent at least 2-3 hours with Adobe on this issue. Finally, they suggested "turning off" GPU Performance (Illustrator/preferences/general/performance). This (fingers-crossed) has been working now for a week...

Ever since "upgrading" to Illustrator version 24, I have been experiencing non-stop crashing, forcing me to constantly re-boot the mac to make s l o w progress in completing needed figure.
For this I pay ~$30/month for the privilege of using Illustrator v24. Note that there never a problem with Illustrator 2018 (at least for me).
