Text to outlines on save PDF
My printers require fonts to be outlined. This is a huge hassle. I need to convert everything to outlines, save the PDF, and then remember to undo my outlining before I save the AI file.

I needed that same functionality as well as exporting PDF with different settings. I ended up developping my own script for this.
Script available on github. Current release is v3.6 (User Instruction "Multi-PDF Exporter 3-5 - Notice.pdf" created for v.3.5 is completely relevant though).

When I save as the file. we should have a option to make all the type as outline, that will help me to prep the file for press.

I provide another solution, first output the PDF with the embedded font, and then convert the PDF font to the outline.
Adobe Acrobat or Ghostscript can be used to convert PDF fonts to outlines.
The already mentioned ghostscript is the free standard tool for this problem. If the use of the command line looks too daunting, you could use a free web service like: https://pdf-editor-free.com/pdf-text-to-outlines/ . You won't have any control whats really happening with your images, but the results are good as far as I tested. You can choose different output profiles -

If you want to output a pdf and automatically have the text turned to outlines, you can make yourself a new PDF Preset,
go to
Edit>
Adobe PDF Presets...>
then make a new preset, choose an initial format such as X-1a:2001, It work with only Acrobat 4
then under advanced tab, pick custom for transparency. and you can select to "convert all text to outlines"
set any other settings you'd usually want, and save it....
If it won't work, draw a line or a rectangle somewhere in the artboard and make it 0% opacity. Then will work

I just gave this a try on a Black and white ad… so many things went wrong.
1. the Preview was darker I though this maybe a standard mac problem as when opened inside illustrator the colours were the same, but in Acrobat it was still darker.
2. when comparing the fonts, they were not the exact same. slightly different
3. the boarder had a little white edging on it, not evenly.this is where i learned how to do that.

perhaps these are not the best steps?

You could avoid this issue by converting to outlines in the PDF after it is saved.
