Restore previous default Stroke alignment to center, or add a preference option for default alignment.
The default stroke alignment used to be centered in previous versions.

Evan, what document profile you woodworkers use when they create their artworks? RGB? If yes, then you can:
1. Use CMYK (Print) profile that does have the default set to center
2. Update RGB (Web) profile to force a new default for stokes.
Locate the Web.ai file on your machine (it can be hidden). In Windows it should looks something like `C:\Users\[username]\AppData\Roaming\Adobe\Adobe Illustrator 25 Settings\en_US\x64\New Document Profiles`, but it obviously depends on version and OS you are using. Draw a rectangle, change the alignment of stroke to center, and then Alt+drag it over the default style in Graphics Styles panel. Save the document and backup it elsewhere, because Ai tends to rewrite these document profiles each update.
I know this sound tedious though :)

I really need this I am a wood worker who uses illustrator to create files for a laser cutter. When its not center alignment it cuts 2 lines instead of one.

Strangely, it's OK for me. What document profile do you use to create new documents which have this behaviour? Or it happens in old documents? Provide more info, please.
