swap stroke and fill in swatch panel
This would seem self evident to me, but being able to swap stroke and fill in the swatch panel as opposed to going all the way over to the tool bar, or swapping to the color panel would be a definite time and focus saver.

Yes! please be consistent in the interface. Why have it everywhere BUT here.
Yes, I know X swaps. and, yes for those that need to know why others need something, having the swap in the swatch panel helps new users I am teaching understand. Memorizing hot keys will come later.

Do you know that Shift+X does this?
It does not mean Swatches should not have the button, but why do you prefer a button you have to aim for over the keyboard hotkey? Just curious. -

@kp: since the current user interface is lacking this function on the swatches panel, you can always use the keyboard shortcut. Pressing the X key on your keyboard will swap the stroke and fill color.
I find this saves me from mousing over to the tool bar to do it, but I also don't have my cursor in/around the swatches panel very often either (my work is less art-creation and more pre-press/production).

Thanks for the great suggestion Lance. What I am looking for is if there is a way to quickly toggle / flip flop fill color and outline color. (ie: red fill with black outline, to quickly toggle to black fill with red outline.)

I like this idea, it'd be a handy addition for newer users unfamiliar with the keyboard shortcut (x key)
In addition to this, 'swap fill for stroke' toggle, how about a 'use current fill color as stroke color' and 'use current stroke color as fill color' toggles along with associated keyboard shortcuts?

This would be a nice timesaver: Similar to the fill & stroke color switch toggle in the tool bar, would be rad to have that in the actual swatch panel. Add color switch toggle to Swatch Panel fill & stroke.
