Illustrator provides these already in its Swatch Libraries. Read to the comment inside to understand how to access these.

Illustrator provides these already in its Swatch Libraries. To view these, do the following:
1. Open Swatches panel
2. Click the button in the lower-bottom corner (with books, 'Swatch Libraries menu')
3. Navigate to Gradients
4. Choose one, like 'Spectrums', top open a new palette — this one contains rainbows.You can navigate between adjacent libraries using triangular arrows buttons at the bottom of this panel.
There are plenty of predefined presets for you to tinker with. Don't forget you can make your own, save them for future use, and search the web for custom presets — these are usually distributed as .ai files.Please comment back if it works for you.
