Adjust spacing between bullets and text
Currently, the bullet-to-text gap is an automatic setting that cannot be controlled by the user, despite placing tab stops on the tabs ruler. There is no mechanism to control this either, in the paragraph tab. Whereas in apps like Word, the spacing can be adjusted between the bullet and text directly.

It’s doable, it’s just hidden and is painful to use.
You have to click the small dropdown next to either the Bullets / Numbered List button (called See bullets / numbered list options), then the small ... button (called More Options) and then get the indents values editable.
Why on Earth the team decided not to expose the values in Tabs, or allow to scale the values with text as a mode — I have no idea. Half-baked™
