'remember last stroke' and 'new art has basic appearance'
Adobe you really should and need to bring some of the finer settings across from the desktop if you are serious about these being PRODUCTIVE tools and not just permanent pre-release beta tests rented under the subscription narrative.
No-one wants to move BACKWARDS either feature OR PRODUCTIVE-wise.
Desktop Illustrator has a SIMPLE setting to either REMEMBER the last selected stroke setting OR allows for 'new art has basic appearance' which could easily be implemented on the ipad version with a check-box in a preference setting.
Without this simple setting my productivity is completely broken and now far more convoluted requiring EXTRA steps compared to the desktop.....which is what I simply go back to.
Please get serious about these permanently developing apps which feel more like paid beta tests when missing SO many simple features which we are already used to as paying customers AND are required to do our job more than to serve our software-supplier's sustainable subscription revenue hopes and dreams!

One of the most important functions missing from the iPad is that we must apply appearance settings after drawing, and we are prevented from drawing with transparency, brush stroke settings, etc. This is the basic behavior users expect from Illustrator.

Agree, it is incredibly frustrating to adjust my brush and stroke settings every time I open the app. Automatically loading previous settings would make a big difference.

Please include these as per the desktop version so as to keep the same consistency and the same work PRODUCTIVITY.
These simple things make ipad Illustrator a frustrating no-go to me while unfortunately being such a STEP-BACKWARDS in comparison to the desktop and general productive useability.
