You can assign brushes to path via the Properties panel on the right, in the Stroke section.

We were able to ship support for Art and Calligraphic Brushes in our 2.0 release. But there is more to be done for Import / Export of (atleast) these Brush types. We’re keeping this thread open for your feedback. Thank you!

First of all, I can't save any brushes I make and use in a separate document; ie add it to a library within illustrator for iPad. Second, I can't import my existing brush files from my Illustrator for desktop, which, I have a lot. having to recreate all of them would be a major hassle. And last but most certainly not least...Why can't I apply my custom brushes to pen tool illustrations??? This makes no sense. Only being able to use the brush tool for brushes means that I can't make a straight line (like holding shift would on desktop) or apply it to pencil or pen drawings. So overall this tool is incredibly limiting, and shouldn't have even been released until it was finished.

They added brushes, but you still can't apply brushes to pen paths, shapes, or strokes! try making a perfectly straight line or circle with apple pencil and no shift key...you can't...
