I am happy to share that we have fixed this bug in our latest release – 27.3.1 which is available worldwide now.
Going forward, our goal is to fix as many top User-Voice bugs as possible and as frequently as possible. Given the nature of the fixes, some of the bugs will take a longer time to fix, but we are on it.

We have the fix available in the latest release. Please update Illustrator using Adobe Creative Cloud application to the latest build for version Illustrator CC 24.0.2 on Win and 24.0.3 on MAC.

I’m using the latest release of Illustrator on a Windows 10 Pro machine. Yesterday, the gradient angle reset to 0 whenever I changed a color stop. Also, adjusting the color stop in a gradient did not edit the swatch — I had to create a new swatch whenever I made an adjustment.
For the same problem in Photoshop, downgrading to version 24.0.1 fixed the issue for me. Also, the problem reportedly happens when double-clicking to open a file in Windows File Explorer, and not when opening a file from inside Photoshop or Bridge.
