    The only way for me to fix this issue was to upgrade the OS to Catalina and then update Illustrator. The last version of Illustrator supported on Mojave will have this issue and I don't think Adobe would be interested in fixing this for such an old OS.

    No update on this yet? I still can't import any png to Illustrator by the way! This is a huge mess!

    Sorry, I think I've figured out what's the issue here and it's my mistake. One system had the variable font family installed while the other one had static weights. This I realised only when I checked the font files in the finder on both systems. Illustrator would show me weights irrespective of which type I had installed – variable or static – and so it didn't strike me. My bad!
