The intended way of setting a default font is to edit document profiles. These files are located in folders like 'C:\Program Files\Adobe\Adobe Illustrator 2023\Support Files\Required\New Document Profiles\[language]\' on Windows and 'Macintosh HD > Applications ▸ Adobe Illustrator 2020 > Support Files > New Document Profiles > [language]' on Macs.
Make a copy of the one you want to use someplace else, open it in Illustrator, make your changes, replace the original and then use it when creating a new file.
There are many tutorials on the web about managing these, like this one: https://productivista.com/new-document-profiles-saves-your-default-settings/
However, this way indeed is not the most discoverable. Please continue to vote and leave comments if you want this to be improved.

Thanks Egor, I see. Yikes that is not a helpful feature for me, as I've never had to use a + character as a bullet. At any rate, I do see the buttons you mentioned—thank you. That said, it's odd that, short of going into Settings…, it is impossible to have a + and a space to start a line. When I see the auto-bullet behaviour occur, I click the "Bullet" button you mentioned—it just keeps deleting the + altogether when I do this. The better behaviour in this situation, in my opinion, would be to leave the + in the point text object—I want to disable the bullet behaviour, not delete the plus. This seems like it would be a common issue for anyone trying to add a telephone number with a country code. It would be interesting to check the usage data for undos and workaround combinations to see how many folks are encountering this.
The good news is that I am able to follow your advice and disable the auto-bullets in Settings…, which solves my problem.
