I have the latest version of Illustrator CC, 23.0.1, and GPU preview still DOES NOT work.

My system runs Windows 10 with i7-8700 CPU and Nvidia GeForce GTX 1050.

GPU preview looks blurry, round shapes have dents in them, and moving objects often resulted in parts of the shapes and text staying in the same place. And thin lines or details won't even show. It is just horrible.

CPU preview is much better, but still has strange refresh issues sometimes. And using CPU preview makes me feel like Adobe slapped me in the face for wasting money on a nice video card for nothing.
