Replace or Delete Swatches should automatically re-color objects with new swatch
I propose swatches have the function of applying new color to objects on the art board whenever a color needs to be replaced with a different color. Instead of simply deleting the current swatch, we should be prompted to "replace current color with new color?" then select the new color after adding it to the palette, then BAM! all the objects are automatically updated with the new color. (Example: art editor says that we will print only using 2 colors: black text with red headlines. I already have the art set using black and green. I could add the red swatch, then delete the green swatch and have all green headlines changed to red for me.)

This has been around for a while without comment from Adobe, probably because this can already be done. I propose users try out the Merge Swatches function. Colors to be merged need to be the same type, such as spot, process, or lab. In the color swatch palette, first, select the color you want to change to, then select the color you want to change from, and then from the hamburger menu select Merge Swatches. The color you don't want will disappear from the palette and items that were the old color will now be the new color. Adobe why? WHY don't you listen to your users? Why do you make everything such a pain?

OK, you persuaded me :)
But I still want it to be a sticky option. -

Very early versions of illustrator were able to were able to delete and replace. I think version 10 is when it changed. The alt method only changes the CMYK value of the swatch. Does not change the spot color.

I wish Illustrator had this feature just like InDesign. It would make my life so much easier!!

If your swatches are setup as GLOBAL then hold ALT and drag and drop the new color onto the old to replace a swatch and automatically recolor it everywhere that swatch is used (seems to work for solids only)

Yes, it would be great if this worked like InDesign. It would give you the option of removing a swatch and replacing it with another in the palette.

it should work like Indesign. You remove a swatch if something on the page uses that colour you have the option to replace it with a different swatch.

You mean that AI should ask me EVERY time I delete a swatch? Noooo.
Just edit green swatch to make it red or use 'Recolor Artwork' or use 'Replace Color' script from Alex Sheingart
