Illustrator allows option to Simulate Color Paper, whereby user can pick any color as the background. (This is accessible from File -> Document Setup)
Does this help solve the described concerns?

An error occurred while saving the comment Anonymous commentedI have same issue. I don’t see opacity slider or option when using the brush tool. It’s grayed out in the properties tab.

This is true. I bought the 2021 Classroom in a Book last week and it doesn’t mention anything related to iPad. Much of the functionality mentioned in the lessons is non-existent in the iPad version so I’ve spent about 75% of my time in each lesson searching for functions that don’t exist and making notes to self so if/when I ever use the desktop version in future, I can go back and review those portions of the workbook. Also my files for the lessons are incomplete because of the lack of certain functions but I’m doing my best to learn. Bottom line, as OP said, because functionality is so different in iPad you do need a different workbook for it.
