Same issue! Also Windows 10 and latest Illustrator. Closing just the document window does work without having to shut down Illustrator completely, but is super annoying as it happens every time.

Hi Melina ,
Thanks for reporting this issue, Illustrator team really appreciate this.
As per attached screen shot , for the selected Text object your fill is below the Characters in appearance panel.
Can you kindly move the Fill above the characters and change fill. This will hopefully resolve your problem.
In order to identify the root cause , can you kindly provide us eyedropper setting snapshot ,you can find eyedropper settings by double click on eyedropper tool .Thanks

This happens to me too, fonts will just randomly disappear even though they are activated. Seems to be a Creative Cloud issue as they are always Adobe Typekit fonts, and once I deactivate them and reactivate them they show up again. Closing/restarting Illustrator doesn't help. Super annoying.
