Make arrowheads have a dedicated fly-out palette
Arrowheads are too difficult to select. Having a fly-out panel so I can quickly choose and apply them would be a great addition for technical illustrators.

Dynamic Bezier Stroke Corner Join
Illustrator offers 3 types of stroke corner joins: Miter, Round, Bevel (same 3 as Offset Path filter/effect do).
Miter one just extends the edges of a stroke with straight lines and then cuts the pointy portion off according to Miter Limit value. This works in a majority of cases when we need a sharp corner, but when curvy segments meet at an angle... the straight join becomes obvious.
Meanwhile, Ai has Join Tool.
Here, at the left side of the image a result of expanding a stroke, with a straight mitered join is rather obvious.

Arrowhead style should be retained so I can continue drawing lines with arrowheads
Arrowheads are way too difficult to apply. If I want to draw multiple lines with an arrowhead style, I have to keep going back to stroke palette and keep applying the arrowhead style, OR use the eyedropper tool. This is inefficient. Being able to set my line weight, color, etc. and then choose arrowhead style and continue to draw multiple lines using the style would be VERY useful and a big time saver.

Stroke Malfunctioning
Stroke keeps changing to 1pt black on an object when attempting to update fill color. Must either undo the fill action or reupdate the stroke again. I would like Illustrator to leave my color and pt settings as I had them, not randomly decide to change them.

Allow to manually sort and rename Variable Stroke Width profiles
It would be great if we had the ability to manually sort VSW profiles.
For now the only way to do it is to delete all the native ones and carefully name your own (and the UI doesn’t offer us to change the name of a profile later).

Allow to detach Variable Stroke Width profiles dropdown as a separate panel
A fly-out panel would be good for VSW profiles, same as in this request for arrowheads: http://illustrator.uservoice.com/forums/333657/suggestions/50777822
When there are a lot of profiles, selecting them from a dropdown menu is hard.

Scale Strokes Only
When Scaling numerically, the have choice whether to scale Strokes (and) effects as well.
What I am looking for, is a way to scale stroke widths, without scaling the objects. In that way, it is easy to change several stroke widths, while keeping the ratio between the stroke widths. (I know the work around, to scale back the objects without scaling the strokes - but that comes with some risks and limitations)

Allow to quickly change stroke units directly from Stroke panel
Currently, the stroke unit can be adjusted via the Preferences > Units > Stroke settings. It would be extremely helpful if this setting could also be made accessible directly from the Stroke panel as a shortcut.
Being able to quickly switch between measurement units is particularly important for us during production workflows. Therefore, we kindly ask you to consider adding a shortcut to the Stroke panel for easier access to unit settings.

Uniform dashes at end of paths
It would be great to have uniform dashes at the end of paths when
"Aligns dashes to corners and path ends, adjusting lengths to fit" is on.Currently we seem to get half sized dashes with this option on

Add a quick way to toggle the alignment of a stoke (Center, Inside, Outside): with Opt/Alt-click and/or a hotkey
There are many modes, states, values in Ai that require precise clicking in a tiny button or a field to toggle or change. We need faster ways to access these.
A keyboard shortcut to quickly toggle how the current stroke is aligned would be nice to have... for those who prefer clicking, Opt/Alt could be added to avoid precise aiming, just to loop through the modes.

Allow to apply different join corners for a live stroke per point
There is an existing request to allow to have different caps for start/end of a stroked path, made by Von Glitschka: http://illustrator.uservoice.com/forums/333657/suggestions/39306955
I think an ability to choose corners per point can be very helpful as well.

Add Round Butt cap option for strokes

There are quite a few cases where I use rounded strokes as a starting point for building shapes and where this option would be useful, as in order to know the correct outer dimensions of a stroke, one has to deduct the stroke with from the end caps.

The Reflect tool should respect stroke variable width and Use Preview Bounds option

Notice how the thicker stroke width moves to the outside of the circle when using the reflect tool, meaning that the reflect tool currently does not take the stroke width in consideration when performing a reflect (or mirror). One therefore have to manually edit the stroke width after using the tool in order to achieve a truly reflected version of the object.

Variable Width point distribution advanced controls
The standard distribution of the width points and number of width points needs a toggle to advanced controls where the width points can be locked to (or between specified) anchor points on the path.
I hypothesize that this would fix the glitch where the movement, addition or subtraction of anchor points throws the width distribution out of wack.• Would also like to see more pronounced the location of all width points when the path is selected instead of fumbling along the path; perhaps secondary color to standard layer color.

Allow to make sharp transitions using Width Tool
Width Tool allows us to set width markers on a path, to make its stroke’s outline blend between set cross-sections. We have some limited controls over these markers, we can make each side have its own width, we can snap them to points, but that’s it.
What we also need is way to make this transitions sharp, rather than smooth.
Look at the image attached.The path on the top is a stroke with a variable stroke profile.
The path on the bottom is a demonstration of what we want (an art brush actually).Sure, we can fake this behavior…

Stroke dialogue box decimal adjustment
In the stroke dialog box, have an up\down arrow on the RHS of the size to affect the “after decimal” size.

External arrowheads for small dimensions
The current Beta version is showing the new Dimensions tool, but as you can see in my screen shot, where I am working actual size, for the small dimensions it would help if there was an option to have the arrows outside the lines going toward the inside of the dimension rather than the outside. Thus leaving the small gap empty and making it visually clearer.
