The intended way of setting a default font is to edit document profiles. These files are located in folders like 'C:\Program Files\Adobe\Adobe Illustrator 2023\Support Files\Required\New Document Profiles\[language]\' on Windows and 'Macintosh HD > Applications ▸ Adobe Illustrator 2020 > Support Files > New Document Profiles > [language]' on Macs.
Make a copy of the one you want to use someplace else, open it in Illustrator, make your changes, replace the original and then use it when creating a new file.
There are many tutorials on the web about managing these, like this one: https://productivista.com/new-document-profiles-saves-your-default-settings/
However, this way indeed is not the most discoverable. Please continue to vote and leave comments if you want this to be improved.

This request to be able to Sort Swatches by HUE...has been in the hopper for quite some time.An error occurred while saving the comment Donn L Pierson commentedI have a feature request to consider for a future iteration of illustrator (or possibly all suite products).
In illustrator in a swatch library or in your swatch panel you have the option to sort by swatch name or by swatch type right now. It would be really great to be able to sort by swatch hue. So you could see your swatches almost how a pantone book shows them. Sometimes you're just looking for a lighter grey or a darker blue from a limited swatch palette and it would be easier to do that if you could sort them by their color rather than by the name.

We have done further updates to Dimension tool with recently released version - 28.3
You can create and use your custom scale for dimension, hide or show units on dimensions and dimensions are now sticky to the object - they transform as well when you transform the object.
